Tonight, we’ll watch a Cary Grant double feature: Topper and His Girl Friday.

And we’ll make pizzas from a recipe we posted during advent last year: Quick & Easy Thin Crust Pizzas. You’ll find a reprint below!
Quick & Easy Individual Thin Crust Pizzas

makes 4 5.5-in pizzas
Ingredients
For the Crust
- .75 c warm water
- 1 tsp yeast
- 2 c flour
- .5 tsp salt
- olive oil for drizzling
- parchment paper
- pizza stone
Toppings are up to you! We use:
- Olive oil
- Canned garlic pizza sauce [shhh...don't tell]
- Shredded Mozzarella Cheese
- Turkey Pepperoni
- [Hot] Calabrese Salami
- Cambazola Cheese
- Capers
- Fresh Basil
Instructions
Dough Method
- [Warning! This gets a little sticky!]
- Place your pizza stone inside of the oven.
- Heat the oven to 500F.
- Cut and lay out four 7-8 in square pieces of parchment paper on a flat surface.
- Blend the water and the yeast in a large glass bowl.
- Add the flour and the salt to the bowl and stir quickly to incorporate.
- Quickly knead the dough into a shreddy looking moist ball. [60 seconds should be more than adequate.]
- Divide the ball into 4 smaller balls.
- Using your lower palm [the heel] spread each ball of dough out into a disc- or kidney-like shape on a piece of parchment.
- The dough WILL stick to the parchment.
Baking Method 1: The "Sauceless" pizza [the kids' fave]
- Gently brush your dough shape with olive oil.
- Place the dough-on-parchment on the pizza stone and bake for 3 minutes.
- Remove the pizza dough [still on parchment] and top with meat, veg, cheese and the like.
- Replace the pizza [still on parchment] back onto the pizza stone and bake for 2 more minutes.
- Remove the parchment from beneath the pizza and bake for a final 2 minutes.
- Cool on the counter for a moment.
- If so desired, add a bit more cheese to the top of the pizza to cover over any brown or well-done bits [the kids are picky!]
Baking Method 2: Pizzas with Sauce
- Spoon sauce onto the dough to your liking.
- Add meats.
- Add grated mozzarella cheese.
- Add other cheeses, capers, garlic, basil and finer toppings.
- Drizzle with a bit of olive oil if you'd like.
- Place the dough-on-parchment onto the pizza stone and bake for 5 minutes.
- Remove the parchment from beneath the pizza and bake for a final 2 minutes.
- Drizzle with additional olive oil if so desired.
- Cool slightly before diving in!
